A small-batch apple juice made fresh each week in Miami has landed at Navi Coffee & Flowers on Grand Avenue in Coconut Grove.
Good Apple, co-founded by Mateo Velayos and Camille von Simson, launched in 2025 after two years of recipe development and now sells at more than 15 retail locations across Miami, Miami New Times reported on Thursday, Aug. 13. Bottles retail for $5.50 to $7.50.
The juice blends three apple varieties: Honeycrisp, Pink Lady and Granny Smith. It contains no added sugar, no concentrates and no preservatives, and must be consumed within 20 days of production. Velayos and a small team bottle it weekly.
"Apple juice just felt untapped," von Simson told Miami New Times. "It was forgotten between the aisles of these alternative drinks. We just thought, 'How hard can it be to make a better-for-you apple juice?'"
Navi built a drink around it
Navi Coffee & Flowers, the specialty coffee shop and florist at 3213 Grand Ave. run by a son-and-mother team, has done more than stock the juice. This spring, Navi created a "golden orchard matcha" that blends Good Apple juice with its house matcha, according to a Modern Luxury roundup of Miami's best matcha drinks.
The shop is open daily from 7:30 a.m. to 4:30 p.m.
Restaurant collaborations and expansion
Good Apple's reach extends beyond retail coolers. Michelin-starred Korean steakhouse COTE developed a seasonal cocktail with the juice, while Palma uses it in a pork glaze and a seasonal dessert. The brand supplies leftover apple pulp to partner chefs: Façade built a full bakery menu around it, and V Gelato created an apple pie ice cream.
Von Simson, who was born and raised in Miami, designed the eight-ounce glass bottle with its signature red cap and hand-drawn apple illustrations. Velayos was born in Miami but raised in Lima, Peru, before returning to the city.
The founders told Miami New Times they aim to expand distribution to "every corner of South Florida." A website and local delivery service are in the works, though no launch date has been announced. The brand's packaging has also drawn interest from buyers in California and New York, according to the founders.
Good Apple started at Legion Park Farmers Market before landing retail partners including Caracas Bakery, Basquet, Suite Habana, Façade and Frankie & Wally's.
